Almond & Peach Pie

Ingredients
For Base
200 Gms Blanched Almonds/Almond Slivers (Chopped)
½ Cup Dessicated Coconut
¾ Cup Crushed Marie Biscuits
2 Tbsp Sugar
60 Gms Butter (Firm) |
For Filling
2-3 Tubs Sour Cream
Pinch Of Salt
1 Cup Icing Sugar
1-2 Tbsp Orange Juice
2 Tbsp Orange Rind
2 Tbsp Vanilla Essence
Sliced Peaches/Chopped |
Method
- Mix almonds, coconuts and sugar.
- Rub butter into the mixture.
- Reserve 3 tbsp of crumb mixture for topping. Press remaining crumbs onto the base and sides of a 9” greased dish. Bake in 275-300 degrees centigrade for 10-12 mins until golden brown and then cool it.
- Place reserved crumbs into small pan and stir over low heat until golden & keep aside to cool.
- Combine sour cream, salt sifted icing sugar, orange juice, orange rind and vanilla essence. Pour into prepared pie shell.
- Arrange peach slices and mango pieces over top of filling. Lightly whip cream & remaining sifted icing sugar. Spoon or pipe around edge of pie.7. Sprinkle with toasted crumbs.
- Chill in the fridge till cool before serving.
