Kanchan’s Italian Corn Rice

Kanchan's Italian Corn Rice


1 Tsp Butter
1 Tin Cream Style Corn
1 Tin Corn Kernels
1 Bottle Red Pesto
Chili Flakes
3-4 Cups Cooked Rice
1 Tsp Corn Flour
1 Cup Milk
½ Cup Cream
½ Cup Water
Black Pepper
Red Chilli Pepper


  1. Melt 1 tsp butter
  2. Add milk
  3. Mix corn flour with little extra milk and add to hot milk. Stir till thick
  4. Add to corn tins, then season. Switch off heat & add rice
  5. Heat pesto with cream &water on low heat, add chili flakes
  6. Layer in an oiled dish or cake pan rice, pesto, rice, pesto, rice
